Composition of Matter.

On August 16, 1921, Sigrid Breitholtz of Finland obtained a U.S. patent for a pastry composition that produced an unusually crisp pie crust. Her method used a small amount of tea infusion — or another mild tannin solution—mixed with flour and fat to strengthen the dough and preserve its texture.
